Carrot Halwa(Gajar Ka Halwa)

This a very popular traditional Indian Sweet as called carrot halwa or pudding made by simmering carrot in milk. It's popularly known an India as gajar ka hales. In India it's make a very special occasion like Deepawali, birthday party 🎊, celebrations and any happiest movement by the people and enjoy. Carrot halwa is one of the most impressive Indian Sweet that would not fail to impress anyone.  

Preparation to make carrot halwa 

  1. First off all wash 500 grams carrots in running water. Peel and fine grate them. A food processor quickly process the grating process. So if you had that. You can use that. Make sure you use heavy bottom large pot or part for the recipe because it help to prevent the halwa from the sticking to the bottom and burning. A pressure cooker is work very well for it.

  2. Now prepare cardamom powder. If you do not have a ready made cardamom powder then take then crush 4 green cardamoms in a mortar pestle or a spice jar. 
  3. On a low heat, roast 10 pistachios , 5 to 6 almonds  and 5 cashew nuts untill it's have to be crunchy. Remove them to a chopping board. Cool and chope them or alternately first chope them first and after that fry it with 1 tablespoon ghee untill golden and crunchy. Set aside. If you may prefer to use raisins , you may fry them in ghee untill plump,  then set aside .

  4. Next to the same pan, put 2 cups milk and begin to hate it. 

Haw to make carrot halwa

  1. Add grated carrots. (optional - if using regular carrots and not ( delhi false)  red carrot her you can saute the carrots in ghee until a nice aroma comes out then pour milk on it )

  2. Steer and cook on a medium flame. Keep staring to prevent burning at the bottom. So you can use a heavy bottom pan, you don't have to stir very often. But I recamound you that you should have to be continually check and stir because the halwa will stick at the bottom. 

  3. You will have always be caution towards the end. Especially when the milk has almost evaporated. 

  4. Cook it until the total poured milk completely evaporates.

  5. Next add half cup +2 tablespoons sugar and stir. 

  6. Sure melts and carrot halwa turns gooey once again. Stir and cook when the moisture is half evaporated, add 1 tablespoon ghee and stir well. 

  7. Stir and cook until the halwa thickness. Just before you finish off, add half teaspoon cardamom powder. 
  8. Finally garnish carrot halwa with nuts and raisins. Serve chilled and worm. 

    How to make best carrot halwa 

  • Choice of carrots : always use fresh, tender and juucy carrot that is less fibrous.if needed first of all taste it yourself before cooking. Carrot that are too old and mature are more fibrous and have a different flavour and texture which do not go well for the halwa. Young carrot are sweeter in flavour & yield a mouth melting carrot halwa. If you cannot find Delhi gajar you can use the regular carrot.
  • Milk: use full fat or whole milk to get a testy carrot halwa. For a low. Far a low fat version just reduce the amount of milk in the recipe or use low fat milk. You can also skip or reduce the amount of ghee. If you vegan then you can use coconut or almond milk. 
  •  Grating carrot : grate the carrots with a hand held grater or food processor. I always use a Food processor. You can grate to thick or thin shreds depending on how you like your carrot halwa to be. Kids always like halwa when they feel halwa sweetness and melt off their mouth.
  • Sauting carrots :Somebody makes this by first saying the grated carrot in ghee for 5 mins. Then pouring the milk. But somebody do not do this just to save time, once the halwa is cooked give a more intense flavour. So that you can do either way. 
  • Cooking :Be cautious & do not leave the carrot halwa on the stove unattached as the milk will get scorched and burnt. You will need to continually stir the gajar halwa.

                 Rajapu Rao 



  • 1/2 kg carrot (gajar: 500 grams) (prefer young carrot) 
  • 2 cups milk (1 cup for instant pot) 
  • 1/2 cup sugar (+2 tbsp optional) (prefer organic) 
  • 1/2 teaspoon cardamom powder ( or 4 pods skinned and powderd)
  • 2 tablespoons GHEE (clarified butter) 

Optional Ingredients 

  • 20 mixed nuts 10 pista,5 cashew & 5 almonds 
  • 2 tablespoons raisins optional. 


  • Wash carrots under running water & peel them. 
  • Grate them in a food processor or with a hand grater. 
  • Dry roast nuts on a low heat until crunchy. Cool and chop them. Or you may alternately chop first and fry them in 1 tbsp ghee untill golden. Then add raisins & fry until they plump up. Remove to a plate. 

How to make carrot halwa

  1. Next milk to a boiling a heavy bottom pot or deep pan. 
  2. Add grated carrot and cook on a medium heat with often string 
  3. Do not have the pot unattended as the milk will get scorched. 
  4. When the milk has completely evaporated add sugar and stir well. Sugar will released lot of moisture and make the entire carrot halwa gooey. 
  5. Cook untill half the moisture evaporates, then stir in the ghee. 
  6. Saute the carrot halwa well in ghee untill the moisture evaporates completely.
  7. When it is done gajar halwa turns aromatic & thick. It will still moist. Sprinkle cardamom powder. 
  8. Garnish carrot halwa with nuts. Serve warm or chilled with ice cream. 

Instant pot gajar halwa 

  1. Prey the soute button and add 1 tbsp ghee to the steel insert to the IP. 
  2. When it is hot fry the nuts until light golden. 
  3. Then add in raisins if using. When they plump up remove to a plate. 
  4. Then add in the carrot & saute for 2 to 3 mins stirring well. 
  5. Pour 1 cup milk and mix well.  Deglaze by scrubbing the bottom of the pot with a spatula.
  6. Secure the instant pot & poaitionthe stream release handle to sealing. 
  7. Press the pressure cook(manual) button and set timing as 3 minutes. 
  8. When instant pot beeps and finishes, do a manual pressure release carefully. 
  9. Stir in the sugar, ghee and cardamom powder. 
  10. Press the saute button & saute untill the milk evaporated completely. 
  11. Garnish gajar halwa with chopped nuts and raisins.


  • Method 2 - using condensed milk after the recipe card. 
  • Method 3- Gajar  Ka Halwa using Khoya. 
For this we can use 1/2 kg gajar, 1 cup milk, 1 cup fretted Joya or mava,1/2 cup +2 tbsp sugar. Followd the same method need as same as above and then add khoya towards the end stir in the carrot halwa untill khoya melts. 

How to make carrot Halwa with condensed milk

Ingredients :

  • 500 grams carrots
  • 1/2 cup + 2 tablespoons milkmaid or condensed milk 
  • 1/4 teaspoon cardamom powder or 1 tap rosewater 
  • 2 teaspoon ghee ( use as needed)
  • 20 mixed nuts 
  • 10 raisins

How to make recipe 

  • Heat a pot with 1 tsp ghee and fry the chopped nuts. When hey turn slightly golden ten add the raisins. When hey turn plump, remove them to a plate. 
  • Add fine grated carrots and pour the condensed milk. 
  • Soute on a medium flame for 2 to 3 minute. 
  • On a low flame, cook covered until the carrots  turn tender. 
  • Stir often and cook till the carrot turn tender and all moisture evaporates
  • Add 1 teaspoon ghee and cardamom powder. Stir well. 
  •  And at final garnish carrot halwa with sliced nuts.
